Banana Bread

Best Banana Bread

Preheat oven to 350
Grease (with butter) loaf pan, bottom only. The more butter you use, the crunchier the top of the loaf will be.

Ingredients
1 Cup sugar
1/3 Cup butter
2 eggs
1 & 1/2 Cup mashed banana (I use 4 good sized bananas for each loaf, and leave them lumpy)
1/3 Cup water
1 & 2/3 Cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder

Cream butter (softened) and sugar with mixer till fluffy
Add eggs and beat well with mixer.

In separate bowl, mix mashed bananas and the water
Add to the egg mixture and mix by hand for about 30 seconds

In another bowl, combine the dry ingredients
Add the dry ingredients to the banana mixture BUT DO NOT USE the mixer! Mix by hand, JUST UNTIL COMBINED!

Spoon batter into loaf pan, bake about an hour. Top should be brown, knife should come out clean.

Cool just 5 minutes in the pan, then put on rack to cool for cutting.
